Cheese marinated with lemon and honey

This is a standing dish for me, as I always have „forgotten“ piece of cheese in my fridge. I make this cheese very often with different modifications for different purposes. Sometimes I don't add lemon juice and add less honey, sometimes I use fresh herbs. If you don't plan to serve the cheese immediately, you can place it in the jar, covered with marinade. You can use any cheese, Manchego, Gouda, Maasdam. On my picture is fresh goat cheese from a local farm.
