Almogrote Gomero

Amogrote Gomero- a traditional dish from La Gomera, an island of the Canaries. The name comes from Arabic “al mojrot”- cheese salsa. It is made of an aged goat cheese, or a mixture of the goat and sheep milk cheese. The cheese is made mainly from unpasteurized milk. There are many recipes for the Almogrote Gomero, but the main difference is only in a proportion of the ingredients.

Almogrote gomero

  • 500 g aged hard goat or sheep milk cheese
  • 4 garlic cloves
  • 1-2 large tomatoes
  • 1/2 chilli pepper, deseeded (1/3 tsp flakes)
  • 1 tsp paprika
  • 100 ml olive oil
  • Grate the cheese or crumble it
  • Skin the tomatoes, discard the seeds
  • Put all ingredients in a food processor and blend until combined (you should still have small cheese crumbs)
  • Serve with a toasted bread and a glass of wine

Feel free to adjust the spices to your taste. You can take any hard aged cheese, e.g. Pecorino, El Pastor.
