Avocado carpaccio with apples and shrimps

Very often to get a very delicious meal you don’t need a long list of exotic and hard-to-find ingredients. What is more important is to find that perfect match of flavours and textures, where even the most simple ingredients make up a sophisticated treat. The recipe below is one of those examples; you can serve it as a light lunch or as an individual appetizer.

Avocado carpaccio with apples and shrimps

  • 1 shallot
  • 1 large apple (Royal Gala, Fuji)
  • 1 large avocado
  • juice 1/2 lime
  • 200 g peeled cooked shrimps
  • 50 ml sweet chilli sauce
  • Black pepper, herbs to you taste
  • Peel and cork the apple, discard the seeds. Peel the avocado, remove the stone
  • For the dressing chop finely the shallots, mix with the lime juice and the chilli sauce
  • Slice finely the avocado and the apple, arrange on the serving plates
  • Place the shrimps over and drizzle with the sauce
  • Sprinkle with the black pepper and garnish with the herbs

This amount of ingredients serves 2 people. Sometimes it is difficult to slice the avocado, in that case I cut the avocado in half, take out the stone and slice it together with the peel, then peel every slice.
