Cottage cheese, Egg & Butter Spread

Egg butter (fin. munavoi) is a popular sandwich spread in Finland. The traditional recipe contains just boiled eggs and softened butter. I prefer this lighter version with a refreshing taste of garlic and herbs.

Cottage cheese, Egg & Butter Spread

  • 100 g cottage cheese
  • 100 g salted butter (room temperature)
  • 1 tbsp chives (chopped)
  • 1-2 hard boiled eggs (peeled, room temperature)
  • 2 garlic cloves (minced)
  • 1 tbsp dill (chopped)
  • Fresh ground black pepper
  • Smash the boiled eggs with a fork on a big plate.
  • Beat the butter and cottage cheese together in a bowl with a whisk or fork until smooth.
  • Stir in the chives, dill and garlic. Season with black pepper.

Spread can be stored in a covered container in the refrigerator for a few days. Allow about 15-20 minutes at room temperature before serving. Take any herbs of your choice. Serve with Finnish Sour Rye Flat Bread , Finnish potato flat bread , Karelian rice pasties , baked potatoes, or as a sandwich filling.
