Tomatoes and snap beans pickle

  • 300 g snap beans
  • 4 medium -sized tomatoes

MARINADE

  • 100 ml vegetable oil
  • 1 tbsp balsamic vinegar
  • 2 tsp sugar
  • 1 tsp black pepper
  • salt
  • Blanch the beans in a salted boiling water for 3-4 min, refresh under the cold water
  • slice the tomatoes
  • whisk all the ingredients for the marinade
  • place the tomatoes and green beans into a container and cover with the marinade
  • leave in the fridge for 2-3 hours
Thoughts and Ideas

This amount serves 4 people. I don’t blanch the beans, but cook them in the microwave for 1 min. You can also add the garlic cloves, onion, herbs of your choice (I add basil and dill).
The longer it stays in the marinade the tastier. Usually I leave it to marinade overnight.
