Zucchini caviar

- 500 g young zucchini
- 200 ml chopped tomatoes
- 2 tbsp onion soup (instant)
- 2 tbsp chopped parsley
- 3 garlic cloves
- 1 tsp sugar (optional)
- 2 tbsp sweet chilli sauce (pinch of chilli or a droplet of Tabasco)
- 1 tap smoked paprika
- salt, black pepper
- sweet onion, sweet pepper, chopped herbs
- combine the onion soup and chopped tomatoes, leave for 10 min
- dice the zucchini, toss with the salt (sugar) and leave to stay for some time
- in a pan simmer the tomatoes until the liquid reduces by 2/3
- in a separate pan heat 1-2 tbsp of vegetable oil, add zucchini and fry them, add the garlic at the end
- transfer the zucchini into the tomatoes sauce, add seasoning, herbs and allow to simmer for 4-5 min without covering
- serve garnished with chopped spring onion, herbs and peppers
- Optionally you can blend the caviar in a food processor
Thoughts and Ideas
The caviar prepared this way has a nice consistency and stays crunchy. The onion soup adds more flavour. If you like your caviar a bit sweeter, you can add the carrot. I like to serve it on bruschetta or on toasted tortillas.
