Vegetable gratin

Introduction

This recipe does not have any “compulsory” ingredients. You can take any combination of vegetables you have at home.

Vegetable gratin

  • 4 medium carrots
  • 300 g parsnips (turnips, rutabaga)
  • 3 red sweet onions (small shallots)
  • 5 - 6 cloves garlic
  • 1 - 2 bell peppers
  • 5 - 7 tbsp vegetable oil
  • 50 ml honey
  • 2 - 3 sprigs rosemary (1/2 tsp dried)
  • 1/2 tsp smoked paprika
  • pinch of chili
  • 3 - 4 sprigs thyme
  • salt, pepper
  • Slice the onions and chop the vegetables
  • Chop finely the rosemary and thyme
  • In a small bowl combine the vegetable oil, paprika, herbs, honey, chili and seasoning
  • Pour over the vegetables, toss to cover and bake for 45-50 min at 170-200C
Thoughts and Ideas

The gratin makes a perfect side dish to any meat course. Don’t be afraid to add honey, the vegetables would not taste sweet, but it brings on their natural flavours.
