Flat bread with meat filling «Kubdari»

Introduction

I was e-mailed this recipe several years ago, my friend, who sent me the recipe, tells that the recipe is of Georgian origin. I cannot tell how authentic is the recipe, the only thing I can tell you that is it a very delicious meal. I did adjust the recipe a bit, i.e. I use less fat for the filling.

DOUGH

  • 500 g AP flour
  • 250 ml tepid water
  • 12 g fresh yeast (2 tsp dry yeast)
  • 1-2 tsp salt
  • 1-2 tsp sugar
  • 1 tbsp drawn butter

FILLING

  • 500 g lean pork meat
  • 100 g fat (drawn butter, lard, chopped pork fat)
  • 2 small onions, chopped finely
  • 100 ml chopped parsley (coriander)
  • 3 cloves garlic (1 tsp powdered garlic)
  • 1 tsp khmeli suneli (mix of dry coriander, dill, basil, bay leaf, marjoram, fenugreek, parsley, safflower or saffron, black pepper, celery, thyme, hyssop, mint, and hot pepper. taken from wikipedia)
  • 1/2 tsp crushed coriander seeds
  • 1/2 tsp hot chilli
  • 70-100 ml meat broth
  • Salt, black pepper
  • Rub the yeast into the sugar, add in a bit of water and leave for 10 min
  • Add the rest of the water, gradually adding the flour make a dough. Add salt and butter at the end<(
  • Knead the dough for 10 min, shape in a ball, transfer into a bowl, cover with the cling film and leave to rise for 1 hour
  • In 1 hour, punch back the risen dough, knead again and leave to rise for another hour
  • Transfer the risen dough into a floured surface and divide into 6 pieces
  • Roll out each piece into a circle of 0,3 inch thick, spread the filling over
  • Bring the edges of the circle together (as a bag) and seal tightly, then flatten the „bag“ using your hands
  • Transfer the bread onto the baking tray covered with parchment paper and bake for 15-18 min at 230C
  • Take out of the oven and brush the bread with the drawn butter
Thoughts and Ideas

For the filling take any meat of your choice – turkey, chicken, beef or a mix. You will have to adjust the amount of fat, a lean meat would need more fat to make the filling nice and juicy. I prefer to take normal pork meat and add just the broth and the drawn butter. Serve it with the fresh tomato salsa.
