Apple and coconut crumble
INTRODUCTION
My recipe catalogue does reflect my taste, I’m not really fond of cakes and biscuits, and you don’t see a big choice of them in the catalogue. The best pudding for me is a fruit dessert and fruit crumble is one of my favourite.

- 2 large apples (Granny Smith)
- 2 tsp lemon juice (1 tbsp passion fruit juice)
- 70 ml raisins (cranberries)
- 100 ml dark rum
- 2+1 tbsp brown sugar
- 250 ml flaked coconut
- 2 tbsp flour
- 50 g, cold butter, cubed + 15 g butter
- Peel the apples, discard the seeds, cut into the segments and then slice
- Put the apples into the bowl, drizzle with lemon juice, add the raisins, and sprinkle with 2 tbsp of sugar. Pour the rum over and leave for 30 min
- Heat 15 g of butter in a pan, add the apples and fry them until golden from both sides
- Add in raisins and rum, stir gently and leave to cook on a medium heat for 3-4 min
- Remove from the heat, add 100 ml of coconut flakes and stir
- Cover a tin (several small ones) with the apples
- In a food processor combine the butter, flour, 1 tbsp sugar and coconut flakes. Pulse several times, until the mixture resembles the bread crumbs
- Top the apples with the coconut crumbs mixture, bake at 225C for 13-15 min until golden
THOUGHTS and IDEAS
The amount of sugar depends on the sweetness of apples, your taste. You can use ground almond instead of the coconut. Those ingredients serve 2 large portions.
