Blueberry cobbler

Черничный кобблер

  • 600 ml blueberry (fresh, frozen)
  • 2 passion fruits, pulp, (1 tbsp lemon juice)
  • 2 tbsp passion fruit liquor (Limoncello)
  • 1 tbsp corn starch (Мaizena)
  • 100 ml + 4 tbsp sugar (to your taste)

TOPPING PASTRY

  • 250 ml AP flour
  • 2 tbsp sugar
  • 2 tsp lemon zest
  • 1 tsp baking powder
  • 200-250 ml cream 30% fat
  • Preheat the oven to 200C
  • Combine the blueberries with passion fruit pulp and 100 ml sugar
  • Dissolve the starch in 2 tbsp liquor and add to the blueberries, stir gently
  • Arrange the blueberries in a baking dish (or several small ones) and put to the oven for 15 min <(
  • Combine the flour and baking powder
  • Mix together the cream, sugar and lemon zest. Gradually adding in the flour make a dough
  • Take the blueberries out of the oven and stir them gently. Top with the dough
  • Bake for 25-30 min
  • Serve with vanilla ice-cream

This amount of ingredients yields 4 portions. If you are using frozen berries, do defrost them first and drain the liquid a bit, otherwise the filling will be too clammy. You can have the topping thicker or thinner, it depends how you like it. The amount of sugar and lemon juice should be adjusted to your taste.
