Fromage blanc pudding with strawberries

Introduction

First, I would like to tell that you don’t have to wait for the strawberry season to make this pudding, use any fruits, which are at season or take the canned ones. I promise it will be equally delicious. This amount of ingredients serves 4 portions.

Fromage blanc pudding with strawberries

  • 250 g fromage blanc, quark or other soft cheese
  • 2 eggs, divided
  • 3-4 tbsp icing sugar
  • 1 tbsp vanilla essence
  • 1 tbsp corn starch
  • 1 egg white
  • 250 g strawberry
  • 1 tbsp lime juice
  • 1 tbsp Limoncello
  • 2-3 tbsp sugar (to your taste)
  • 1 tsp lime zest (optional)
  • Cut the strawberries in half, the large ones in 4 pieces
  • In a bowl combine the lime juice, sugar, liquor and pour over the strawberries. Stir gently and leave for 15 min in a fridge
  • Grease and sprinkle with the sugar the baking dishes
  • Arrange the strawberries at the bottom of the baking dishes
  • In a bowl whisk the cheese, icing sugar, vanilla, starch and the egg yolks
  • Whisk the egg whites until firm and gradually fold into the cheese mixture. Stir gently
  • Fill in the baking dishes by 3/4 and bake at 190C for 20 min
  • Serve immediately
Thoughts and Ideas

It is a very simple recipe, but very delicious. The light consistency reminds the one of a souffle. I took passion fruit juice and liquor instead of the lime and Limoncello. The amount of sugar depends on the sweetness of the strawberries. The most important thing in this recipe is that the cheese is not dry and grainy. If you have grainy cheese or ricotta, I would recommend to press it through the sieve and mix with 3 tbsp of milk or cream. Don’t over mix once you added the egg whites or the pudding will lose its airy consistency.
