Strawberries with mascarpone and basil cream

This dessert is easy to make, looks great and tastes amazing. I will write the original recipe and give my changes in the comments.

Strawberries with mascarpone and basil cream

  • 500 g very sweet, medium-sized strawberries
  • 1 - 1,5 tbsp icing sugar
  • 1.5 tbsp raspberry vinegar (red wine vinegar)
  • Wash the berries, remove the stems, halve the berries and place in a bowl
  • Combine the icing sugar and vinegar and add it to the strawberries, stir gently and leave to chill for 30 min in a fridge
  • 125 g mascarpone cheese
  • 100 ml cream 25% fat
  • 1 tbsp icing sugar
  • 50 ml chopped basil leaves
  • In a bowl combine the mascarpone and cream, add the icing sugar and beat together
  • Add the basil and stir well
  • Serve the strawberries topped with the cream

I used the passion fruit juice instead of the vinegar. Also I took fromage blanc instead of mascarpone. I think that 50 ml of the chopped basil (its about 20 large basil leaves) is a bit too much, the cream turned to have an overpowering basil flavor. I took a bit less. You can also use thyme or rosemary, adjusting the proportions to your taste.
