Orange and matcha cheesecake

I love to use matcha in baking, not so much because of its taste, but of the beautiful colour it gives. In my opinion matcha has to be combined with something, which stands out in flavor. The best combination for me is matcha and orange.

Orange and matcha cheesecake

  • 200 g digestive biscuits
  • 50 g butter, softened
  • 240 g cream cheese
  • 60 ml double cream
  • 60 ml freshly-squeezed orange juice
  • 3 - 4 drops orange essence
  • 80 – 90 g sugar
  • 1 egg white
  • 1 - 1,5 tbsp matcha
  • 2 tbsp Grand Marnier liquor(other orange liquor)
  • 3 g (1, 5- 2 leaves) gelatine
  • Crush the biscuits in a food processor, mix with the butter
  • Press the mixture into the serving glasses or 8in cake tin and put to the fridge
  • Soak the gelatin in a cold water
  • In a bowl combine the cream and matcha, stir thoroughly (whisk lightly)
  • Squeeze the gelatin from the excess of the water and dissolve it in the warm orange juice
  • Beat together the cream cheese and sugar until smooth, stir in the cream with matcha and whisk until light and fluffy
  • Pour in the orange essence and orange juice with gelatin. Stir thoroughly
  • Whisk the egg white until firm peaks and carefully fold into the cheese mixture in several batches
  • Spoon the mixture into the serving glasses on top of the biscuit base
  • Chill in the fridge for 2-3 hours
  • Serve garnished with the orange piece

You can make this cheese cake even without the biscuit base. Feel free to use the lemon or lime instead of the oranges, in this case you have to use more sugar and take Limoncello or other lemon liquor.
