Strawberry cream jelly

One more recipe from the “Gourmand’s Dinner” – a recipe contest on our forum. The combination of strawberries and cream is a predictable combination. This time I decided to experiment and to go for strawberries, cream and… jelly

Strawberry cream jelly

  • 300 g strawberries
  • 150 ml cream (30-33%)
  • 3 tbsp sugar (according to your taste)
  • 2 tbsp lemon juice
  • 1 tbsp water
  • 3 g gelatine (2 leaves)
  • Soak the gelatine in a cold water
  • Blend the strawberries and pass through the sieve
  • Squeeze the gelatine from the excess of water and dissolve in the warm lemon juice mixed with 1 tbsp water
  • Add the gelatine into the strawberries blend and stir well
  • Wisk the cream with sugar until stiff peaks
  • Add the cream to the strawberries in several batches, stirring well after each addition
  • Pour the jelly into the serving bowls and chill for 3 hours

The amount of gelatine could very, I don’t like the dessert jellies, which are to firm. The gelatine here is used just to keep the shape. You can serve the jelly sprinkled with the chocolate shavings, or drizzled with the chocolate sauce. I used passion fruit juice instead of the lemon juice.
