White chocolate and fromage blanc mousse with passion fruit

White chocolate could be too sweet if eaten alone, but when you combine it with the right ingredients it could be a delicious and balanced treat.

White chocolate and fromage blanc mousse with passion fruit

  • 100 g white chocolate
  • 125 ml fat-free milk
  • 6 g gelatin (3-3,5 leaves)
  • 400 g soft cheese (fromage blanc, quark)
  • 3 egg whites
  • 1 tsp vanilla essence
  • 50 g passion fruit pulp without seeds

For serving

  • 50 g passion fruit pulp with seeds
  • 1 tbsp honey
  • Soak the gelatin in a cold water for 2-3 min
  • Finely chop the chocolate (grate or use the food processor)
  • In a small saucepan heat the milk together with the chocolate, stir constantly until melted
  • Remove from the heat and cool down for a few min
  • Squeeze the gelatin from the excess of the water and dissolve it in the warm passion fruit pulp
  • Pour the gelatin mixture into the chocolate, add vanilla and stir well
  • Add the cheese into the chocolate in several batches, whisk with the mixer for 30 sec
  • Whisk the egg whites until the firm peaks and add them into the chocolate and cheese in several batches, stir gently after each addition
  • Divide the mousse between 6 serving bowls (150 ml each) and chill in the fridge for 3 hours
  • Serve with the passion fruit pulp and honey

This mousse is quite light in calories, one portion has only 120 kcal. You can take the whipped cream instead of the egg whites, but the consistency and calories will change. You can use yoghurt instead of the cheese.
