Passion fruit curd

- 70 ml passion fruit juice
- ~100 ml sugar
- 50 g butter, diced
- 2 eggs
- Beat the eggs and sugar until foamy
- Add in the passion fruit juice and beat again
- Fill in the bigger saucepan with water, put to the heat, place the bowl with the mixture over it, so that the bowl does not touch the boiling water
- Add in the butter
- Stirring constantly keep the curd over the bain-marie until it thickens
- Remove from the heat, cool down, store in the jars covered tightly.
Thoughts and Ideas
Adjust the sugar according to the sourness of the passion fruit. The curd keeps well in the fridge.
