Olives pickled with garlic

- 3 garlic bulbs
- 300 g olives of your choice (natural, stuffed)
MARINADE
- 150 ml water
- 150 ml olive oil
- 100 ml vinegar (balsamic)
- 2 tsp sugar
- 1 tsp salt (optional)
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp rosemary
- 1 small chilli pepper, deseeded
- 2 bay leaves
- Peel the garlic
- Blanch the garlic cloves in the boiling water for 3 min, refresh in the cold water
- In a saucepan combine all ingredients for the marinade and bring to the boil
- Put one layer of the olives into a jar, top with the garlic layer, repeat to fill in the jar. Pour in the marinade
- Cover the jar tightly and allow to stay for 1 week at room temperature before serving.
