Olives pickled with garlic

Olives pickled with garlic

  • 3 garlic bulbs
  • 300 g olives of your choice (natural, stuffed)

MARINADE

  • 150 ml water
  • 150 ml olive oil
  • 100 ml vinegar (balsamic)
  • 2 tsp sugar
  • 1 tsp salt (optional)
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 small chilli pepper, deseeded
  • 2 bay leaves
  • Peel the garlic
  • Blanch the garlic cloves in the boiling water for 3 min, refresh in the cold water
  • In a saucepan combine all ingredients for the marinade and bring to the boil
  • Put one layer of the olives into a jar, top with the garlic layer, repeat to fill in the jar. Pour in the marinade
  • Cover the jar tightly and allow to stay for 1 week at room temperature before serving.
