Quince confiture with passion fruit

Introduction

This confiture could be served with both sweet and savoury dishes.

Quince confiture with passion fruit

  • 500 g ripen quince
  • 500 g sugar
  • 5 - 7 saffron strands (optional)
  • 150 ml passion fruit pulp, without the seeds
  • Dice the quince (0,5 inch dice), you can peel the quinces before if you want
  • Cover the quince dices with the sugar, add passion fruit pulp, stir, cover and leave for 12 hours at room temperature
  • add the saffron strands to 1 tbsp of water
  • stir the quince mixture, transfer to a heavy-bottom pan and bring to the boil
  • reduce the heat to a minimum and leave to simmer for 40 min, stirring occasionally
  • add in the saffron water 15 min before the end of cooking
  • cool down the confiture and transfer to the jars
Thoughts and Ideas

The colour on the photo did not go through any Photoshop makeup. It is the real colour! Those, who prefer softer fruit pieces, should cook the confiture for 30 min only.
