Passion fruit liquor

Introduction

My friend Dora, knowing how much I love passion fruit, have shared this recipe with me, for which I'm very grateful to her. The liquor is heavenly delicious with the unforgettable aroma.

Passion fruit liquor

  • ~1 l passion fruit pulp with the seeds
  • 750 ml 96% alcohol
  • 4 cups water
  • 2 cups sugar
  • In a saucepan bring the water and sugar to the boil, stir to dissolve the sugar and cool down
  • Add in the passion fruit pulp, the alcohol and mix well
  • Pour into the clean jar with the airtight cover and leave in a cool dark place for 30 days, shaking the jar from time to time.
  • Press the liquor through the sieve, pour into the clean bottles and cover tightly
Thoughts and Ideas

I took fresh passion fruit pulp, but I think the frozen one will work as well. To my taste the liquor is too strong in this alcohol proportion, next time I will take 50 % vodka and less water. I filtered the liquor several times: first time through the sieve, and 2 times through the coffee filter. The „leftovers“ pulp I use as a syrup for the cakes or as a sauce to the ice-cream.
