Kiwi and lime confiture

Introduction

I wrote several times that I prefer the long-cooked jams and confitures. I like their thick and sticky consistency, whole fruits inside and rich taste. But after preparing this kiwi and lime confiture in 10 min, I realized that sometimes you can break your own rules and get a very satisfying result!

Kiwi and lime confiture

  • 4 large firm kiwis
  • peel of 1 lime (sliced finely)
  • 180 ml sugar
  • 1 lime
  • Peel the kiwi and dice the flash
  • Leaving the peel on, cut the lime lengthwise in quarters, then cut each wedge into 5 mm slices
  • In a bowl suitable for micro-oven, combine the kiwi, lime, peel and sugar, stir thoroughly
  • Cook uncovered for 5 min at 650W
  • Stir and cook for 6 min at 750W
  • Cool down, transfer to a clean jar, cover tightly and keep in the fridge
Thoughts and Ideas

Kiwi and lime is my best favorite taste combination. I also tried to make it with lemon, it does taste good, but lime matches kiwi much better. It keeps in the fridge for a long time. Ideal for toasts, scones, pancakes, etc.
