My recipe
Fish in pepper sauce

- 500 g fish fillet
- 2 green peppers, deseeded and sliced
- 2 red peppers, deseeded and sliced
- 1 medium-sized onion
- 1 canned tomatoes
- 2 cloves garlic
- 100 ml white wine
- 1-2 tsp sugar
- Pinch of cumin (optional)
- Salt, black pepper, dill, spices
- Slice thinly the onion and garlic and saute on a bit of oil for 4 min
- Add in the peppers, stir and cook for 4-5 min, add the sugar, cumin stir again and cook for 2 more min
- Add the tomatoes, wine, bay leaf, seasoning and allow to simmer for 15 min on a medium heat
- Cut the fish into the bite-size portions
- In a separate pan heat a bit of oil and fry the fish quickly from all sides
- Add the fish to the sauce and cook for 5 min
- Serve on toasts, with white rice or mashed potatoes, garnished with the chopped herbs
Thoughts and Ideas
Take any fish you like. I add the lemon grass instead of the cumin. Also I always add chilli pepper or Thai sauce. The best wine to match is Sovignon Blanc Sumarroca
