Sea bream with lemon grass and ginger

Recently, I had come up very quickly with the idea of the fish dish for 4 people. Plus, it was important to avoid fish smells while cooking.

Sea bream with lemon grass and ginger

  • 4 medium-sized sea breams, clean, scaled, gutted
  • 1 stem lemon grass (8 inch)
  • 1 leek (8 inch)
  • 2-3 clove garlic
  • coriander
  • fresh ginger (1 inch)
  • zest of 1/2 orange
  • 2 small hot peppers
  • 4 small shallot
  • salt
  • sesame oil
  • Slice shallot, ginger, garlic, leek, lemon grass and hot peppers (discard the seeds)
  • Mix all the ingredients, add orange zest and coriander
  • Place the fish into the baking tray, covered with parchment paper or foil
  • season the fish with salt, for each fish use 1 tbsp of the spice mixture to put inside and 3/4 of the mixture to cover the fish
  • Drizzle with sesame oil and seal the edges of the paper or foil
  • Bake for 25 min at 220C
  • Serve with spicy coriander sauce.
