Steak with rocket salad - Tagliata di manzo con rucola
Introduction
This recipe is probably the most simple in the world as it does not require anything more than a good piece of meat.
Italians claim it to be their national dish. Let it be like that.
I will write the classic recipe and give my comments.

- Beef steak (without the bone) 1 - 1. 5 kg
- Coarse sea salt, rosemary, black pepper, sage, olive oil
- Rocket salad
- Chop the herbs, mix with the salt, pepper, olive oil and rub the blend into the meat
- Wrap the meat into a cling film or foil and leave to rest for 30 min
- Heat a griddle pan and on a high heat grill the meat 2-3 min each side
- Reduce the heat and fry the meat for 10-12 min each side

- Cut the meat on the diagonal into the 1in slices
- Arrange the rocket leaves on a dish, place the meat slices over, season with salt and pepper, sprinkle with the olive oil and put to the oven for 1-3 min
Thoughts and Ideas
I like a medium-rare steak, so it takes 10-15 min each side.
I don’t put the rocket to the oven together with the meat, I add it after. For a finished taste I like to dress the rocket leaves with the olive oil and balsamic vinegar.
