Leg of lamb in orange and cinnamon marinade
Introduction
This is my old-favorite recipe, which I make very often.

- 1 leg of lamb (700-900 g) (lamb cutlets, ribs, etc)
- 2 heads garlic
MARINADE
- 150 ml orange juice
- 2 - 3 tsp brown cane sugar
- 2 tbsp vegetable oil
- 1 tbsp chopped rosemary
- 2 bay leaves
- 1/2 - 1 tsp ground cinnamon
- 1 tsp salt
- 1 tsp freshly ground black pepper
- Combine all the ingredients for the marinade, pour over the meat and leave for 12 hours (minimum)
- Add a bit of oil into a pan, place the garlic heads cut in half, bay leaves, pinch of rosemary, stir and cook for 2 min
- Pat dry the meat and quickly seal it on the pan from all sides
- Add a bit of oil into a roasting dish, pour in the oil with the garlic and place the meat
- roast for 45 min at 175C for every kg of meat, basting now and again with the liquor
Thoughts and Ideas
This time I used 3 oranges instead of the orange juice, peeled and chopped+orange zest from 1 orange. It gives more flavor to the marinade. I had a 800 g leg of lamb and cooked it in a micro-oven, micro+convection, 20 min, 50% capacity, 180C.
If you take rack of lamb, cook it under the grill for 15 min, basting with the cooking liquor for several times.
Serve with rice or couscous.
