Rolls with asparagus
Introduction
The recipe is simple and delicious! I prefer to use fresh asparagus when in season, but canned or frozen one could also be used.
You can make regular pancakes, I like egg pancakes, without flour.

DOUGH
- 4 eggs
- 4 tbsp sparkling water
- 100 g asparagus
- salt, pepper, other spices
FILLING
- 300 g asparagus
- 200 g smoked salmon
- dill, creme fraiche, salmon caviar, black pepper
- Blend the asparagus in a food processor (you can boil the asparagus before)
- Whisk eggs with sparkling water and seasoning
- Heat the oil in the small pan and fry the pancakes
- Steam the asparagus, run under iced-cold water
- Place a slice of salmon on a pancake, add asparagus and roll up
- The rolls could be fried on a pan or served with cold creme fraiche and salmon caviar.
