Rolls with asparagus

Introduction

The recipe is simple and delicious! I prefer to use fresh asparagus when in season, but canned or frozen one could also be used.
You can make regular pancakes, I like egg pancakes, without flour.

Rolls with asparagus

DOUGH

  • 4 eggs
  • 4 tbsp sparkling water
  • 100 g asparagus
  • salt, pepper, other spices

FILLING

  • 300 g asparagus
  • 200 g smoked salmon
  • dill, creme fraiche, salmon caviar, black pepper
  • Blend the asparagus in a food processor (you can boil the asparagus before)
  • Whisk eggs with sparkling water and seasoning
  • Heat the oil in the small pan and fry the pancakes
  • Steam the asparagus, run under iced-cold water
  • Place a slice of salmon on a pancake, add asparagus and roll up
  • The rolls could be fried on a pan or served with cold creme fraiche and salmon caviar.
