Pea and smoked Cheddar muffins

For 6 muffins
- 250 g green peas (fresh, frozen)
- 200 g smoked Cheddar (diced)
- 120 g flour
- ½ tsp baking powder
- 125 ml butter milk
- 1-2 tsp sugar
- ½ tsp salt
- 2 eggs
- ¼ tsp black pepper
- 1 tbsp oil
- 250 ml water
- 1 tsp sugar
- 1 tsp salt
- Bring the water to the boil, add 1 tsp sugar and 1 tsp salt, blanche the green peas for 1 min
- Drain the water and reserve the peas
- Preheat the oven to 180° C (370° F)
- Combine in a bowl the flour and baking powder
- In another bowl, whisk together the eggs, butter milk, sugar and oil. Season with salt and pepper
- Gently blend in the flour mixture, the peas and cheese
- Oil 6 small muffin tins, fill them 2/3 full with the batter. Bake for 25 minutes
