Tuna salad with green beans and omelette
Introduction
This salad is one of my favourites, I make it very often. You can use not only tuna, but any other fish.

serving 4 people
- 200 g green beans
- 2 cans (180 g) tuna in olive oil
- 4 hard boiled eggs, quartered
- 200 g salad leaves
- 1/2 red pepper, sliced
- 1/2 green pepper, sliced
- 1/2 yellow pepper, sliced
- 1/2 sweet red onion, sliced
OMELETTE
- 2 eggs
- 100 ml sparkling water (milk)
- salt, black pepper
- 4-5 spring onions
DRESSING
- 100 ml vegetable oil
- 1 small garlic clove (1/2 tsp dried garlic)
- 1 tbsp chopped dill
- 50 ml lemon juice
- 2 tbsp sweet mustard ( or regular mustard+honey)
- Whisk all the ingredients for the dressing
- Boil the green beans for 4-5 min, drain and run under cold water
- Cut the beans
- Whisk the eggs and fry the omelette, cut it.
- Arrange the salad leaves on the serving plates, add peppers, eggs, onions, beans, omelette
- Drain the oil from the tuna meat and add the meat to the salad
- Season and pour over the dressing.
