Salted cod salad - Ensalada de bacalao
Introduction
Reading the recipe for the first time you could find the combination of salty fish with sweet ingredient a bit exotic. You have to trust me on that one, in Spain (not in Italy) the bacalao is very often combined with honey, grapes, oranges, raisin, etc. This marriage of ingredients has a perfect balance of sucre-sale.

- 300 g bacalao –salted cod (desalted by being soaked in water)
- 1 large orange
- 50 ml raisin
- 1 apple (Granny Smith)
- 2 potatoes
- 1 sweet medium-sized onion
- 100 g salad leaves
- 3 tbsp orange juice
DRESSING
- 1 tbsp lemon juice
- 1/2 tsp honey (optional)
- 1/2-1 tsp sweet mustard
- 50 ml olive (vegetable) oil
- Salt, black pepper
- Soak the raisin in warm water (apple juice) for 20 min
- Combine all dressing ingredients and whisk well
- Boil potatoes in the skin, peel, slice and while still warm cover them with 1/2 portion of the dressing
- Peel the apple and the orange, cut in segments
- Divide salted cod into smaller pieces
- Slice the onion
- Arrange salad leaves on the plate, add potatoes, oranges, apples, bacalao, onion
- Add dressing and sprinkle with raisin
Thoughts and Ideas
Those, who cannot get bacalao, could use hot-smoked or cooked fish. In this case I would recommend to make the dressing more spicy and add less raisins.
