Salad with avocado and pomegranate

  • 300 g any cooked meat, sliced (chicken, duck breast, beef, etc)
  • 2 avocados
  • 1 pomegranate, seeds only
  • 200 g mixed salad leaves
  • 50 g almond flakes

DRESSING

  • 50 ml vegetable oil (olive)
  • 2 tbsp lemon juice
  • 1 tsp honey (molasses), optional
  • 1 tsp mustard
  • Salt, black pepper, other spices of your choice
  • Toast the almond flakes on a dry pan
  • Whisk all the ingredients for the dressing
  • Peel and slice the avocados
  • Arrange the salad leaves on the plate, add in the meat slices, and drizzle with the dressing. Top with the pomegranate seeds and almond flakes
Thoughts and Ideas

I always add a few drops of the pomegranate juice to the dressing.
