My recipe
Salad with avocado and pomegranate

- 300 g any cooked meat, sliced (chicken, duck breast, beef, etc)
- 2 avocados
- 1 pomegranate, seeds only
- 200 g mixed salad leaves
- 50 g almond flakes
DRESSING
- 50 ml vegetable oil (olive)
- 2 tbsp lemon juice
- 1 tsp honey (molasses), optional
- 1 tsp mustard
- Salt, black pepper, other spices of your choice
- Toast the almond flakes on a dry pan
- Whisk all the ingredients for the dressing
- Peel and slice the avocados
- Arrange the salad leaves on the plate, add in the meat slices, and drizzle with the dressing. Top with the pomegranate seeds and almond flakes
Thoughts and Ideas
I always add a few drops of the pomegranate juice to the dressing.
