Red cabbage pickled with apple and raisin
I love fresh cabbage salad, but, unfortunately, the cabbage sold here, lacks crunch and juiciness. So, I always try to combine it with something to add more flavour and texture.
I make this salad very often as a garnish to meat or fish dishes. I use rice vinegar, would be very good with apple or raspberry vinegar. I add raisin together with apple, also sometimes use currants, cranberries, blueberries...The longer it pickles the testier.
