My recipe
White cabbage salad with cashew nuts
Introduction
Light and healthy salad! Could be served as a separate meal.

- 500 g juicy cabbage
- 1 large orange
- 50 g cashew nuts
- Salt, black pepper
DRESSING
- 50 ml vegetable oil (peanut oil)
- 1/2 orange
- 1 tbsp cashew nuts
- 1 tsp honey
- 1 tsp mustard (medium hot)
- Shred the cabbage very thinly, add salt and crumple up the cabbage
- Chop the nuts
- Cut the orange in half, squeeze the juice from one half, peel the other half, cut into the segments, discard any white membrane
- Whisk all the ingredients for the dressing
- Pour over the cabbage and leave for 15 min in the fridge
- To serve arrange the cabbage on the plate, add the orange and cashew
Thoughts and Ideas
You can take any nits of your choice, I think cashew fit the best. I took Scandinavian sweet mustard.
