Salad with persimmon, avocado and pomegranate

This salad is very light and healthy. Could be served as a lunch for nuts make it quite a substantial meal.

Salad with persimmon, avocado and pomegranate

  • 2 ripe avocados
  • 2 ripe persimmons
  • 300 g mixed salad leaves
  • 1/2 sweet onion, sliced
  • 1 pomegranate, seeds only


  • 1 pomegranate, juice only
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 50 ml walnut oil (any other of your choice)
  • 1 tsp sweet mustard
  • Salt, black pepper
  • Whisk all the ingredients for the dressing
  • Peel and slice the avocados, slice the persimmons
  • Arrange the salad leaves on a serving plate, add the avocado, persimmon, onion
  • Drizzle with the dressing and garnish with the pomegranate seeds

You can add balsamic vinegar. I always add the lemon juice to the dressing, as the pomegranates here are very sweet.
