Avocado, field mushrooms and zucchini salad

- 2 avocado
- 200 g young zucchini
- 200 g field mushrooms
- 1/2 lemon, juice only
- 1/2 orange, juice only
- 1 tsp lemon zest (optional)
- 50 ml vegetable oil
- 1 tbsp liquid honey
- 200 g green salad leaves
- spring onion, chopped
- salt, peppers
- in a small bowl whisk together the orange and lemon juices, zest, honey and vegetable oil
- add the salt, black pepper and whisk again
- slice finely the zucchini and mushrooms
- peel the avocado, remove the stone and discard. slice the avocado and add to other vegetables. Drizzle the vegetables with the 1/2 of the sauce, place to the fridge for 10 min
- arrange the salad leaves on a serving plate, top with the vegetables, drizzle with the rest of the sauce and sprinkle with the spring onion
Thoughts and Ideas
The amount of ingredients will serve 4-6 people. The salad is very light and nutritious. Feel free to take the cucumber (peeled) instead of the zucchini. You can also top the salad with the Parmigiano shavings.
