Fresh green pea cucumber salad

Салат из молодого горошка с огурцами

  • 200 g fresh (or frozen) green peas
  • 100 g lebanese (long) cucumbers
  • 3 springs of green onion
  • 50 ml chopped dill
  • 300 g lettuce
  • croutons
  • Pour 300ml of water into a saucepan add 1 tea spoon of salt and 1 tea spoon of sugar. Bring to boil, and pour in the green peas (frozen peas should be previously defrosted) , boil for 1 – 2 minutes. Pour the boiling water out and then immediately douse the peas with cold water.
  • Cut the bread into squares, preheat 1 Tbsp of vegetable oil in a pan, and fry the bread slices until they turn golden brown.
  • Finely chop the cucumbers and the onion springs, combine with the green peas.
  • Tear the lettuce leaves up, put them on plates, cover with green pea cucumber and green onion mixture.
  • Season the salad with sauce and sprinkle with chopped dill and croutons.


  • 200 g natural unsweetened yogurt
  • 1 Tbsp of sugar
  • ½ tsp of salt
  • ½ tsp of lemon pepper (black pepper combined with lemon zest)
  • 50 ml chopped fresh mint
  • ½ lemon zest


  • 1 Tbsp of not very spicy mustard
  • 1 Tbsp of sugar
  • 2 hardboiled egg yolks
  • ½ tsp of salt
  • 2 Tbsp of white vinegar
  • 200 ml whipping cream
  • black pepper


  • 50 ml lemon juice
  • 100 ml vegetable oil
  • 1 Tbsp of honey (up to you)
  • 1-2 minced garlic cloves
  • salt and black pepper
  • For the dressing combine all the ingredients and whisk until smooth.

You don’t have to boil the green peas if they are fresh. You may choose any kind of dressing you like, depending on, again, your personal taste, and also, on what kind of dish you want to serve this salad with.
