Potato, cabbage and radish salad

4 serves
- 8 medium sized potatoes (unpeeled and boiled whole)
- 300 g white cabbage (shredded)
- 2 green onions (chopped)
- 10 radishes
DRESSING
- 1 egg yolk
- 1 tbsp mustard
- 1 tbsp white wine vinegar
- 1-2 tsp honey (to taste)
- 1 garlic clove (minced)
- 4 tbsp Canola oil (EV olive oil)
- Salt, fresh ground black pepper
- 30 g radish sprouts (arugula)
- Peel potatoes and cut into wedges. Slice the radish. Place the cabbage, potatoes and radish in a bowl, season with salt and pepper and mix well.
- Whisk together egg yolk, garlic, honey, vinegar and mustard. Continue to whisk constantly, adding the oil in a slow, steady stream until the liquid seems to thicken.
- Pour the dressing over salad and sprinkle the green onions and radish sprouts before serving.
