Canarian avocado sauce with garlic

Introduction

You will be served this sauce in any restaurant on Gran Canarias, it accompanies different dishes or simply eaten just with toasted bread.

Canarian  avocado sauce with garlic

  • 1 large avocado
  • 4 - 6 cloves garlic
  • 1 tbsp lemon juice
  • 2 egg yolks
  • 100 - 150 ml olive oil
  • Salt, black pepper
  • Combine all ingredients in a food processor and blend until smooth
Thoughts and Ideas

This sauce keeps very well, I think it is because of the oil, which preserves it. I use powdered garlic and corn oil, no more than 100 ml. I also add a pinch of sugar and chilli.
