Maple walnut vinaigrette

Vinaigrette is a mixture (emulsion) of olive oil and vinegar, often flavored with herbs, spices, and other ingredients. It is used most commonly as a salad dressing, but also as a cold sauce or marinade.

This classic northern France vinaigrette with «Canadian touch» is great for all types of vegetable salads, or for traditional tossed green salad, especially with the more bitter greens, as arugula, water cress, Belgian endive and etc….

Maple walnut vinaigrette

  • 100 ml Toasted finely chopped walnuts
  • 1 tbsp finely chopped shallots
  • 100 ml Champagne vinegar (Cider vinegar)
  • 75 ml Maple syrup
  • 100ml Walnut oil (Vegetable, Olive EV oil)
  • 2 tbsp water (optional)
  • Salt, fresh ground black pepper
  • Place all ingredients in a bowl.
  • Vigorously whisk until the dressing is well blended.
