Scallops with salmon in salmon roe sauce

This is a recipe I laid out a few years ago on one forum. During this time I can not count how many times this dish was cooked. The taste might be considered to " haute cuisine", and the complexity of preparation can be attributed to the simplest recipes. This is a dish that can be prepared on weekdays or holidays and will satisfy the most capricious taste gourmet.

Scallops with salmon in salmon roe sauce

  • 4 sea scallops
  • 400g salmon fillet (cut into 4 pieces)
  • 100 ml of white wine


  • 150 g butter
  • 150 g cream
  • 100 ml of white wine
  • 2 shallots
  • 100 ml fish stock
  • 60 g of salmon roe
  • Salt, pepper, dill
  • Wrap each scallop with a piece of salmon and strung on a skewer.
  • .
  • Fry in butter on both sides, add the wine and stew until tender (5 minutes maximum).
  • Finely chop shallots and fry slightly until butter gets golden-brown.
  • Add cream and broth, salt, and pepper, keep stirring at the same time, bring the sauce to thicken.
  • Put the scallops on a plate and pour the sauce and add the eggs.

It is very tasty. It definitely woth to prepare. Last time I have done it with trout. In my opinion it is more appropriate, since a less intense flavor than salmon and do not "clog" the taste of scallops. I prepared orange sauce and replaced basic recipe for fish stock with orange juice. The taste improved further. You can blend the sauce if you wish to. If scallops are not available, you can do it with fish or shrimps.
