Scallops with salmon in salmon roe sauce
This is a recipe I laid out a few years ago on one forum. During this time I can not count how many times this dish was cooked. The taste might be considered to " haute cuisine", and the complexity of preparation can be attributed to the simplest recipes. This is a dish that can be prepared on weekdays or holidays and will satisfy the most capricious taste gourmet.
It is very tasty. It definitely woth to prepare. Last time I have done it with trout. In my opinion it is more appropriate, since a less intense flavor than salmon and do not "clog" the taste of scallops. I prepared orange sauce and replaced basic recipe for fish stock with orange juice. The taste improved further. You can blend the sauce if you wish to. If scallops are not available, you can do it with fish or shrimps.
