Shrimps «Pil-pil» – Gambas al Pil-pil

Is it another dish from Spanish cuisine, which is as popular as Gambas al ajillo, shrimps in olive oil with garlic. The only difference is that here we use hot chilli, which gives a special flavour to the taste. There are many ways how to prepare this dish despite the simplicity of ingredients. I will give my version, whish serves 2 portions.

Shrimps Pil-pil

  • 30-40 medium-sized shrimps (20-25 large)
  • 5 cloves garlic
  • 120 ml olive oil (extra-virgin)
  • 2 small chilli
  • 1 tsp smoked paprika
  • Chopped dill
  • Pinch of salt
  • Peel the shrimps
  • Slice finely the garlic
  • Slice the chilli, discard the seeds
  • In 2 serving pans heat the oil, add the garlic and chilli, saute until the garlic turns gold
  • Stir in the paprika and the shrimps, add the salt. Keeping the heat on fry the shrimps for 1 min, stirring gently several times
  • Remove from the heat, allow to rest for 1-2 min before serving. Sprinkle with the chopped dill

The amount of garlic and chilli could vary, depending on your taste. If you don’t have the smoked paprika, take the regular one. You can use the Drawn butter instead of the olive oil, the dish will taste even better..
