Cherry& Tomato Gazpacho

Cherry& Tomato Gazpacho

  • 500 g mature tomatoes
  • 1 small sweet (Spanish) onion
  • 200 g fresh sour cherry (frozen)
  • 1 big red bell pepper
  • 2 slices white bread
  • 1 small chili pepper (seeds removed)
  • 1 - 2 Tbsp sherry vinegar
  • 2 tsp sugar (or to taste)
  • 50 mm vegetable oil (EV olive oil)
  • 1 cup cold water
  • Salt, ground black pepper
  • Make a cross slash on the skin of each tomato
  • Blanch them in the boiling water for 30 sec and run under the icy water
  • Peel the skin off and cut in half
  • Grill or roast the pepper, transfer to a bowl, cover with clingfilm. Leave to cool, peel and remove the seeds
  • Preheat 2 Tbsp of oil in a pan, and roast the bread slices until they turn golden brown
  • Add all the ingredients to a blender and process until smooth
  • Serve with the ice cube and topped with fresh cheese, couple of cherry, chopped parsley and few drops of vegetable oil
