My recipe
Cherry& Tomato Gazpacho

- 500 g mature tomatoes
- 1 small sweet (Spanish) onion
- 200 g fresh sour cherry (frozen)
- 1 big red bell pepper
- 2 slices white bread
- 1 small chili pepper (seeds removed)
- 1 - 2 Tbsp sherry vinegar
- 2 tsp sugar (or to taste)
- 50 mm vegetable oil (EV olive oil)
- 1 cup cold water
- Salt, ground black pepper
- Make a cross slash on the skin of each tomato
- Blanch them in the boiling water for 30 sec and run under the icy water
- Peel the skin off and cut in half
- Grill or roast the pepper, transfer to a bowl, cover with clingfilm. Leave to cool, peel and remove the seeds
- Preheat 2 Tbsp of oil in a pan, and roast the bread slices until they turn golden brown
- Add all the ingredients to a blender and process until smooth
- Serve with the ice cube and topped with fresh cheese, couple of cherry, chopped parsley and few drops of vegetable oil
