My recipe
Spicy vegetable soup

- 3 tbsp olive oil
- 2 celery stalks
- 1 chilli peppers, deseeded
- 3 garlic cloves
- 1 zucchini
- 150 g squash
- 100 g celeriac
- 2 tbsp lemon juice
- 2 medium-sized tomatoes
- 400 ml vegetable (chicken) stock
- 1/2 medium-sized onion
- 1 medium-sized carrot
- 1 red pepper
- 1 tbsp sweet chilli pepper sauce
- Chop finely all vegetables
- Cut a cross on the top of the tomatoes, blanch them in boiling water for 30 sec, refresh under cold water and peel off the skin. Dice the flesh
- In a pan heat a bit of oil and saute the garlic and onion until golden, add in other vegetables and allow to simmer for 4-5 min
- Mix in the tomatoes and chilli and simmer for 2-3 min
- In a pot bring the stock to the boil and add the vegetables, season with salt, pepper, lemon juice and chilli sauce
- Bring to the boil, reduce the heat and cook for 10-15 min
- Blend the soup until smooth using either the stick blender of jug blender
- Serve in a bowl, garnished with the chopped herbs and creme-fraich
