Spicy vegetable soup

Spicy vegetable soup

  • 3 tbsp olive oil
  • 2 celery stalks
  • 1 chilli peppers, deseeded
  • 3 garlic cloves
  • 1 zucchini
  • 150 g squash
  • 100 g celeriac
  • 2 tbsp lemon juice
  • 2 medium-sized tomatoes
  • 400 ml vegetable (chicken) stock
  • 1/2 medium-sized onion
  • 1 medium-sized carrot
  • 1 red pepper
  • 1 tbsp sweet chilli pepper sauce
  • Chop finely all vegetables
  • Cut a cross on the top of the tomatoes, blanch them in boiling water for 30 sec, refresh under cold water and peel off the skin. Dice the flesh
  • In a pan heat a bit of oil and saute the garlic and onion until golden, add in other vegetables and allow to simmer for 4-5 min
  • Mix in the tomatoes and chilli and simmer for 2-3 min
  • In a pot bring the stock to the boil and add the vegetables, season with salt, pepper, lemon juice and chilli sauce
  • Bring to the boil, reduce the heat and cook for 10-15 min
  • Blend the soup until smooth using either the stick blender of jug blender
  • Serve in a bowl, garnished with the chopped herbs and creme-fraich
