Orange muffins with passion fruit and poppy seeds

Introduction

In my house the muffins are very popular. I make them very often, sweet or savory. Some recipes are good some are very good, some are TOP. The recipe below belongs to the later, TOP category – the more I use passion fruit in my recipes the more I’m convinced that it brings on a sophisticated flavour to an ordinary meal.

Orange muffins with passion fruit and poppy seeds

  • 1 orange, juice only (100 ml)
  • 3 tbsp passion fruit juice
  • 2 eggs
  • 80 g poppy seeds
  • 160 ml sugar
  • 280 ml flour
  • 100 g butter
  • 1 1/2 tsp baking powder
  • On a dry pan toast the poppy seeds for a couple of min
  • In a bowl beat the eggs and sugar until the mixture turns pale
  • Melt the butter and cool it down for a while
  • Add the butter into the egg mixture, sieve in the flour mixed with the baking powder and the poppy seeds
  • Gradually stir in the orange and passion fruit juice
  • Fill in the muffin tins by 3/4 and bake for 15 min at 200C
Thoughts and Ideas

I baked those muffins in the mini-cups of 30 ml. I never make any frosting for the muffins, but if you like you can make it by combining 250 ml icing sugar with 3 tbsp passion fruit juice. The amount of sugar depends on the sweetness of the oranges and passion fruit.
