Orange cookies

Introduction

These cookies have a consistency, which is similar to the famous Danish butter cookies, very short and delicate. The dough is very easy to work with, so you can shape the cookies according to your taste – round, square, pretzel-like, etc. The big advantage of these cookies is that they keep very long without changing their delicious taste and texture.

Orange cookies

  • 100 g unsalted butter
  • 50-70 g icing sugar
  • 1/2 tsp natural orange essence
  • 1/2 orange, zest only
  • 1 small egg (or half of the medium-ranged egg)
  • 1/2 tsp natural vanilla essence
  • 200 g cake flour
  • 200 g AP flour + 1/2 tsp baking powder
  • 1 - 2 tbsp sour-cream
  • 1 tbsp orange liquor (optional)
  • Preheat the oven to 200C
  • Cream the butter and icing sugar until fluffy, add vanilla and orange essence
  • Keep beating add the egg, sour-cream, liquor, orange zest
  • Sieve in the flour, mix
  • shape the dough into a ball, cover with the cling film and chill for 30 min in a fridge
  • roll out between 2 layers of the cling film into the 0,4-0,6 inches thick layer and cut out the cookies
  • transfer the cookies onto the try covered with the parchment paper, brush with the water and sprinkle with the caster sugar
  • bake for 12-15 min until nice and golden
Thoughts and Ideas

The amount of icing sugar in the recipe depends on your taste, I don’t like my cookies to be too sweet, so I take 50 g of icing sugar. This time I didn’t sprinkle the cooking with the caster sugar, but dusted them in the icing sugar after they have been baked. You can cut the calories a bit, by taking 80 g of butter. The amount of flour could differ by 2-3 tbsp because of the different weather conditions and different flour. Keep the cookies in the airtight containers.
